Delivering food, shelter, and hope to the poorest of the poor
We proudly feature Jim Burk and Rich Eimer for this month’s “Light on a Knight.” Hailing from The Woodlands, Texas, these men have demonstrated their faith by working alongside Cross Catholic Outreach and their parish, Sts. Simon and Jude, to carry out the Works of Mercy through tangible and inspiring service projects.
Earlier this year they helped activate the Box of Joy® ministry in their parish. They also rallied their council and community to pack 100,000 meals for the poor! Just last month, Jim and Rich encouraged their council to host a retreat led by Cross Catholic Outreach’s Father Dave Caron, O.P., inspiring the men of the parish to exemplify the faith and obedience of St. Joseph. Jim and Rich, with the blessing of Father Pat Garrett, facilitated a visit to the parish by an Outreach Priest, who shared our mission to transform the poor and their communities materially and spiritually for the glory of Jesus Christ.
We are grateful to these Knights for the energy and vision they bring to their council, parish and wider community by putting their faith into action!
