Try This Meat-Free Recipe

Chimimbe lives in Malawi, and she knows what it’s like to see her children go hungry.

“Before joining the food and nutrition program, my children were malnourished and weak,” she said. The effects of malnourishment are not only felt by the person going hungry; everyone around them can see them physically getting thinner and weaker. Chimimbe shared that the lack of food even caused her children’s hair to grow discolored and brittle.

Fortunately, Chimimbe and her children are now receiving Vitafood meal packs that contain all the nutrients they need. She said, “[My children’s] health has improved, and they are passing their classes. Now we know the food groups and what to eat. I make sure they get enough fat, meat, carbohydrates, fruits and vegetables.”

Chimimbe is so grateful to the people who helped pack and send Vitafood to her village. She and her children enjoy eating it and feel much stronger and healthier. Getting Started

Ingredients:

  • Cooking oil (enough to coat the pot)
  • 4 cups uncooked white rice
  • 2 (15-ounce) cans red beans, drained and rinsed
  • 2 (15-ounce) cans crushed tomatoes
  • 5 cups water
  • 2 cloves garlic, minced
  • 1 onion, chopped
  • 1 tablespoon chili powder
  • 2 tablespoons ground cumin
  • 1 teaspoon cinnamon
  • 1 teaspoon allspice
  • Salt, to taste

Directions:

  1. Heat a large pot over medium heat and coat it with cooking oil.
  2. Add the garlic, onion, tomatoes, and spices. Sauté for 3-4 minutes.
  3. Add the rice and cook according to the package instructions. Add about 5 cups of water – more if necessary. 
  4. Once the rice is cooked, stir in the red beans. Cook for 2-3 more minutes until everything is well combined and heated through.
  5. Season with salt to taste. Enjoy!
